Cod with Ritz Topping

This is the simplest recipe ever:

4 Cod fish filets
1 Sleeve Ritz crackers
1 Stick of butter
3 Tbsp of white cooking wine
Garlic Powder

Melt the butter with the white cooking wine in a pan.  Crush the ritz crackers and drop the crumbles in the pan with the butter and cooking wine.  Sprinkle garlic powder, salt and pepper over the crackers.  Top the cod filets with the ritz crackers and bake in the oven for 30 minutes at 350 degrees.  Enjoy!

Mixed Berry Smoothie Bowl

Made my first delicious smoothie bowl this morning! It was spinach + frozen mixed berries + frozen banana + vanilla bean Greek yogurt + 1/4 avocado. The toppings where some honey granola, chia seeds, almonds and more mixed berries. Super easy and tasty breakfast!

When you’re not that hungry for dinner and want something light… Yellow squash + zucchini + vegetable spiralizer = squazoodles!

Just cooked some vegetable noodles with sautéed mushrooms and threw in some pesto sauce. Super fast and delicious!

Red Velvet Beet Waffles

Went to a local produce stand yesterday and saw some beets… I’ve never had them but upon seeing them I was inspired to make red velvet beet waffles for a Sunday morning brunch! I was nervous for how they would turn out since I don’t have all the special ingredients used on this recipe, but they still turned out great. The recipe is from Ana Sandee’s Colorful Foodie blog, who is an awesome cooking inspiration! If you’re interested, check out her recipes…

And here’s the recipe for the red velvet beet waffles:
