Meat Surprise Spaghetti Pie!

On the morning radio show I always listen to they were talking about spaghetti pie so naturally I decided I had to try it for myself! I made a really simple one though without any ricotta/cottage/cream cheeses inside.

I simply cooked some spaghetti, and in another pan I threw together half an onion, basil/oregano/salt/pepper, and a load of various leftover meats in the fridge! I used chicken, beef and brisket. Then I cracked 2 eggs in about a bowl that had a cup of shredded mozzarella cheese and mixed those together. When the spaghetti was done, I threw it in the pan with the meats/onion, cheese/egg mixture and half a bottle of spaghetti sauce.

Finally, I baked the pie at 350 for 10 minutes. While it was cooking, I put some bread in a food processor and threw in pepper, garlic powder, oregano and basil and blended that up. After the first 10 minutes were up from baking, I opened the oven and sprinkled the bread crumbs and fresh mozzarella cheese on top and baked the pie for 10 more minutes and then let it cool after the time was up! Easy and delicious!

Banana Crepe Stack Masterpiece!

Decided to make more crepes with my leftover batter from yesterday and I have to say this is one of the top 5 breakfasts I have ever made!! I made 3 crepes and spread the chocolate peanut butter hummus inbetween the crepes with banana coins as well. Then on top I put some more banana coins, walnuts, coconut, figs and drizzled some peanut butter on top of it all! SO PERFECT.

Savory Crepes

This morning I made some savory crepes! I’ve only ever had fruity ones and I have a bunch of peppers and onions I want to use up before going on vacation so I decided to throw them into some crepes! I used this crepe recipe which is the best one I’ve used so far:

I made the crepes with red pepper, onion, scrambled eggs, chopped up ham and a mixture of salsa/pizza sauce and it really hit the spot!

Mini Taco Bowls

Saw some recipes that used the back of cupcake tins too that I’ll also have to try sometime but it was a really satisfying lunch!! I loved it so much that I also decided to experiment with making a s’mores dessert mini taco… šŸ˜šŸ‘ŒšŸ¼

Chocolate Peanut Butter Dessert Hummus

Came across a dessert hummus recipe randomly and decided that I wanted to try it! It was great because it took less than 5 minutes to whip up AND it was extremely delicious! 100% will do this again in the future for family or friends because it’s a great easy dessert to serve after a dinner with some company! Plus it’s fun to get creative thinking of dipping foods! Not to mention it’s an easy recipe to tweak and add different flavor combinations as well. I think I may try to add coconut next time as well, yum!

Chocolate Peanut Butter Dessert Hummus

Taco Breakfast Skillet

Used leftovers from my broccoli crust pizza to make a taco breakfast skillet. I combined the black olives, taco meat, chopped red peppers and yellow onions and threw it in a mini skillet with an egg cracked in the middle. I then baked it for about 15-20 minutes in an oven set at 350 degrees and topped it with some green onions and cheese before I pulled it out so it could melt nicely and it’s now one of my new favorite breakfasts! šŸ˜


Update: made this again for dinner and had to add the picture from it… Put Brussels sprouts, ham, red pepper, onion and fresh mozzarella in this one and Brussels sprouts + eggs may be one of my new favorite combinations!!

Broccoli Crust Pizza

As I was brainstorming what I wanted to make for dinner today, cauliflower pizza crust came to mind. However, I was wanting to mix it up a bit and try something new, so I explored these options:

They all sound awesome, so I’m hoping to try them all someday! Today, I decided to try the broccoli crust pizza using the recipe listed on that website.

I made 3 pizzas:
1. Smoked brisket pizza with barbecue sauce
2. Smoked pulled pork pizza with barbecue sauce
2. Taco pizza with beef, red peppers, black olives and green peppers topped with homemade seasoned tortilla strips and sauced up with a taco sauce/pizza sauce mixture.

THEY WERE AWESOME.

I was inspired to do the taco pizza from this website… can’t wait to try a bunch of these. Ā Especially the deep dish apple pizza (#14)!! Ā Definitely need to save this link:

Avocado Pesto Zoodles

I wanted something quick and easy for dinner and I had some zucchini and avocado on hand, so I cooked up some zoodles, onions and peppers with a creamy avocado pesto sauce! Ā I took the easy way out and just blended the avocado with jarred pesto sauce and it was still absolutely delicious! Ā Not the greatest looking picture, but it was definitely tasty.
