Bailey’s French Toast!

I’m not a big french toast person, but when I asked my sister what she wanted for breakfast this morning she settled for french toast.  When thinking about what kind I wanted to make, I thought to try and experiment with making a Bailey’s flavored french toast!  I was inspired by this recipe:

Bailey’s Spiked French Toast

For mine, though, I adjusted the recipe and just used 1 egg and 1/8 cup of bailey’s + a dash of vanilla almond milk.  I also threw the vanilla, cinnamon and some nutmeg in there as well.

My sister wasn’t a big fan of the Bailey’s idea, so I made her some french toast inspired by this recipe:

Perfect French Toast Recipe

I split this recipe in half so that it only required 1 egg, and for the milk part I did 1/4 cup of chocolate milk + 1/4 cup of vanilla almond milk.  Both recipes were awesome!!  For my french toast, I also spread some filling between the two pieces of bread that was about 1 tbsp of Justin’s vanilla nut butter melted + 2 tbsp of cabot creek vanilla bean yogurt stirred together and it was delicious!  I topped my toast with some dried figs, soft baked apricot granola and some almonds.  For not being a huge french toast fan, this breakfast almost makes me want to be a convert!  🙂

Egg “Crepes”

Tapped into the creative side this morning for breakfast!  I had a lot of onions and peppers in the fridge, so decided to make an egg “crepe” stuffed with veggies and hummus!  I simply cut up the veggies and sautéed them.  Then I cooked the eggs on a covered frying pan so that they were completely flat like a crepe.  After that, I spread some black bean hummus on the eggs and added peppers, onions and some fresh parsley to the inside of the eggs and rolled them up!  If only I had some bacon bits, I think this would have been breakfast perfection!

Easy Stromboli

Made some delicious stromboli with friends today!  We made 2 types of stromboli:

  1. Barbecue chicken with red onions
  2. Pepperoni and sausage with potatoes and peppers

It was super easy to make too…just cooked the onions and meat, spread the sauce on some pillsbury pizza dough and then added the toppings on top of the dough (not too close to the edge!).  After adding the toppings, we just folded the dough in half and cooked it at 350 degrees in the oven until the crust was a good golden brown color.  Looking forward to another friends and stromboli date!

Warm Mixed Fruit Bowl

Decided to do a version of this recipe for lunch today, because how awesome does a warm fruit bowl sound! >> http://nutritionstripped.com/warm-fruit-bowl-cashewmilk/

This is what I used:
1/2 cup frozen mixed berries (rinsed)
1 small red apple, cut into chunks
3 dried black mission figs, cut into small pieces
1/2 cup vanilla almond milk
1/4 cup essential fiber cereal
1 tbsp sliced almonds
sprinkle of chia seeds

This is what I did:
1. Turn oven to 350 degrees.
2. Put parchment paper in baking pan and place berries, apple chunks and figs on parchment paper.
3. Sprinkle fruit with cinnamon.
4. Bake for 10-15 minutes until fruit is soft and giving off some juice.
5. Mix warm fruit in a bowl of almond milk and sprinkle with toppings! I topped with the cereal, almonds and chia seeds.
6. ENJOY!

Blueberry Walnut Chia Overnight Oats

Found a recipe from “homemadenutrition” on Instagram that is insanely delicious!! Love that it’s easy to take on the go in mornings as well! Here’s the recipe:

Ingredients:

1/2 cup frozen blueberries
1/2 banana
3 tbsp walnuts
1/3 cup Greek yogurt
1/3 cup milk
1/8 tsp vanilla
1/3 cup oats
1 tbsp chia seeds

Procedure:

Simply blend the blueberries, banana, walnuts, yogurt, milk and vanilla together and then transfer to a mason jar. Stir in the oats and chia seeds and then store overnight in the fridge! Garnish in the morning with extra walnuts and blueberries. 🙂


Frozen Banana Chickpea Bars

Found a recipe from “lilsipper” on Instagram for frozen banana and chickpea bars secretly disguised as a chocolate chip cookie ice cream bar look alike!! The best part was that the ingredients were so simple and it was easy to make! Definitely needs to be a regular in my freezer from now on! Here’s the recipe:

Ingredients:

1 can of chickpeas (15 oz drained and rinsed)
2 tbsp of honey or agave
1/4 cup smooth nut butter
1/4 cup coconut flour
Mini or chopped chocolate chips to taste
2 1/2 frozen bananas

Procedure:

1. Blend chickpeas, honey and nut butter in a blender until completely smooth.
2. Transfer batter to a bowl and fold in coconut flour. Consistency should resemble that of play-doh.
3. Add desired amount of chocolate chips and knead with hands.
4. Line an 8 x 8″ baking pan with parchment paper, leaving excess to overlap the pan.
5. Press cookie dough into pan and cover top with excess parchment paper. Freeze for 90 minutes.
6. Remove cookie dough from freezer and let sit while blending the bananas. Blend frozen bananas until thick and creamy.
7. Cut cookie dough directly in half and remove one slice from the pan. Set aside.
8. Spread frozen bananas on the cookie dough that is in the pan and top with the other half of cookie dough.
9. Place back in freezer for 30-40 more minutes or until frozen bananas harden up. Slice into desired sizes/slices and enjoy!!

Broiled Grapefruit

Super delicious and simple breakfast… Just sprinkled some brown sugar on top of half a grapefruit plus some walnuts and soft baked granola. The sweetness of the brown sugar was perfect with the bitterness of grapefruit! I put it in for 5 minutes and the inside was still a tad cold so note for the future: leave in a bit longer!

Peaches ‘n Cream Cinnamon Bread French Toast

I have a bunch of cinnamon bread in the house that I’m trying to use up, so here’s another variation of a cinnamon bread breakfast I whipped up!

First I got about a tablespoon of cream cheese and stirred it up with a about 1/4 cup of vanilla bean Greek yogurt. Then I cut up some peaches and threw them in a pan with some coconut oil to help them caramelize up a bit.

While those were cooking I combined a bowl of 1/4 cup vanilla almond milk, 1 egg white, maple syrup drizzle, vanilla, cinnamon and nutmeg. I dredged the cinnamon bread in this and then threw it on the frying pan!

Then I put together the masterpiece! Just one of the slices of bread with the “cream” in the middle with some caramelize peaches, topped with another piece of bread and more peaches n cream topping. I was so excited to eat it that I didn’t even think of putting nuts or coconut on top for a little bit of texture!! Oh well… Next time! 🙂

Banana Bread Pudding

Decided to try and make some banana bread pudding with a banana that was on its last couple of hours before it went bad and some delicious cinnamon bread I bought at a local bakery!!


I used 2 slices of the bread, toasted it and tore it up into small pieces. Then I threw in 1/4 cup of vanilla almond milk, 1 egg white and a smashed banana in a bowl and mixed them together. I then transferred this mixture into a mug and microwaved for 3 minutes. It was delicious except for the fact that the bottom was watery which always happens when I end up trying to make bread puddings so maybe more bread next time or add in some oats to help soak up more liquid? We’ll keep trying!! But for the most part this was a good breakfast! 😊
