I cut the recipe in half and I didn’t add any sweetener because I thought they were perfect as is, so they were definitely a healthier waffle option, seeing that it was only pretty much 4 ingredients (minus the leaveners)! I wanted a basic waffle so that I could throw a lot of flavor on top: I threw mostly cherries and some strawberry chunks in a saucepan with lemon juice, a splash of vanilla extract and fresh orange mint leaves. I just cooked them until they were warm and still had shape…so not too mushy. I also topped the waffles with some homemade dried coconut flakes. Great breakfast!
