Cornmeal Molasses Pancakes 

This morning I made some cornmeal molasses pancakes using this recipe and they were awesome!!

I made a couple of substitutions though… I used melted coconut oil instead of butter and also used half almond flour/half all purpose flour. They came out great!



Pear Waffle Fritters

I went to bed last night thinking about what I wanted to make during my free morning, and I randomly came up with the idea of making a pear waffle fritter! All I did was chop up a pear into super tiny pieces and squeezed the water out of the pear inside a kitchen rag. Then I combined the pear shreds in a bowl with an egg, some cinnamon and 2 tablespoons of almond flour. Then I threw them in the waffle maker and they came out great! It was the first recipe I came up with by myself off the top of my head, woo hoo!

Almond Butter and Jelly Pop Tarts

I couldn’t think of anything to make for breakfast this morning, so I opened my fridge and searched around for inspiration until I found some old pie crusts that have been in there forever and thought of making homemade pop tarts instantly!

I used this recipe to go off of, but made my own filling of almond butter and jelly. It was brilliantly delicious! 🙂 Super easy and fun breakfast!
