Similar to the zucchini boat I made the other day, I decided to use up another large zucchini that was sitting in the fridge by making one with buffalo chicken. I just cooked up some chicken in a pan seasoned with salt and pepper and then stirred around the chicken with sautéed onions and buffalo wing sauce. I put that mixture in the zucchini bit after cutting out all the inside flesh and then cooked it for 20 minutes at 350 degrees. With 7 minutes left, I pulled the boats out and sprinkled Parmesan cheese on top so it would melt. Also a delicious zucchini boat option!
