Sheet Pan Pumpkin Pancakes

This morning I received an email from Kirbie’s Cravings email list (greatest emails ever) of sheet pan pancakes and decided to try her recipe with my own twist…adding pumpkin! Here’s the link:

I added a cup of pumpkin to the batter, and it was absolutely delicious!!! The pumpkin definitely gave the pancakes a much more dense texture over an airy and fluffy texture, but I loved the addition of the pumpkin flavor. Looking forward to entertaining people one morning for a sheet pan pancake brunch sometime soon!

Banana Bread Roulade Cake

This morning I came downstairs to find a lot of over ripe bananas sitting in my kitchen, so I decided to try and look for a perfect over ripe banana recipe to make, and I definitely hit the jackpot here with this one:

I had some friends over for dinner too so thankfully I was able to share the recipe, and we were all in agreement that it was an amazing recipe!! The texture of the cake was absolutely perfectly made when the owner created the recipe. It was so good, that I’m bringing the leftovers in for my coworkers to try in the morning tomorrow… just too good to keep to myself!

Crockpot Creamy Tortellini Soup

For dinner tonight, my sister wanted to make this recipe, so we threw it all together in the crockpot and let it cook. I enjoyed it and thought the Soup was great except for the fact that it didn’t need that last cup of milk! It was a bit too milky for my taste (really not a fan of milk!) so that freaked me out a tad, but otherwise it was a very good soup! We will definitely be making it again, but I am going to lay off the milk quote a bit and make it more chicken brothy!

Jello Dessert Cup

Not too long ago I found this video and decided to try it!

I made it for my sister and I to eat after a long week of work as a “treat yo self” night and it was definitely worth it!! I used a raspberry jello and inside the cup I put a scoop of the peach froyo I made a while back, topped with a pumpkin cookie! It was a fun, interesting dessert to make!

Zucchini + Hash Brown Fritter Spaghetti Grilled Cheese Sandwich

Suddenly, the song “What A Beautiful Mess I Made” makes so much sense. For dinner tonight, I shredded a zucchini and then combined it with some hash browns, a sprinkle of Panko bread crumbs, an egg and a sprinkle of mozzarella cheese. I mixed all of that together and then threw the mixture into a waffle iron. Then, I put havarti and shredded mozzarella cheese on one of the fritters, some leftover homemade spaghetti on top of the cheese and covered the sandwich with the other fritter half. I gently laid the waffle iron on top of the sandwich to allow the cheese to melt, then leaving me with a beautiful mess of a sandwich creation. It was delicious!!

Tiramisu Cake

Tomorrow is my parent’s 35th wedding anniversary, so I decided to try and make a cake they both love–Tiramisu! There were so many varieties of recipes all over the internet so I had a hard time deciding, but I finally settled on this one because it seemed the easiest to do. The only thing is that I did not know where to buy amaretto, so I threw in a splash of Bailey’s in place of that for an extra added flavor. The cake was so delicious and had such a nice coffee flavor, I loved it and so did my parents! Not to mention the cake held together really nicely and wasn’t extremely soupy which has happened in the past with other Tiramisu attempts. Successful recipe!
