Italian Ricotta Cookies

Today, I decided to treat a young group of athletes by making them some Italian Ricotta Cookies!! They are one of my favorites—Ricotta always makes everything better! I used this recipe:

The only thing I did differently was for the glaze, I used 3 cups of powdered sugar instead of 3 & 3/4 cups. Also, the recipe made 75 cookies for me instead of 4 dozen!!! For the topping, I sadly did not have any sprinkles at my house, so I decided to problem solve and chop up some flavored chip morsels. I put chocolate, peanut butter and pumpkin morsels on the icing as toppings. My favorite was the pumpkin! Anyway, the kids loved them and they were delicious! A great recipe find!
