Greek Yogurt Pumpkin Pancakes

I have had some Greek yogurt in the fridge to use up, as well as some pumpkin purée. Because of that, I wanted to make some Greek yogurt pumpkin pancakes! I wanted to try and keep it on the healthier side when skimming through recipes, and decided to try this one:

I also mixed some more Greek yogurt with pumpkin purée to put in between the pancakes. They were great and I enjoyed the texture of the pancakes!
