White Bean & Tuna Salad

This weekend, I have been craving white beans and I have some cans of tuna that have been taking up space in my pantry, so I decided to see if white bean and tuna salad was a thing. After some googling, it turns out it is actually a thing and I decided to make this recipe for lunchesthis week:


It is actually really tasty and I’ll be using some Aldi Fit & Active flatbreads to make wraps for lunch this week with the white bean tuna salad inside! Going to be a good week of lunches!


Greek Yogurt Chicken Salad

This weekend, I made a ton of shredded chicken after buying 6 pounds of it in order to make 3 large meals out of it. All I did was stick the chicken breasts in a crock pot with a bit of water, salt, pepper and garlic chicken. I put it on high and after about 3 hours it was thoroughly cooked through and ready to be shredded!

The first thing that I made with the shredded chicken was this Greek yogurt chicken salad for lunch all week:


It was a good variation on chicken salad that was healthier and tasted good! I look forward to eating it for lunch this week!

Pizza Waffles! 

Today, I had a friend over for lunch, so I decided to treat her to a unique meal… We made some delicious pizza waffles! All I did was buy some crescent rolls, and then I squished each of the two triangles together to make rectangles. Then, I put one of the rectangles on the waffle iron. After that I layered some pizza sauce, cheese, pepperoni and green peppers topped with another rectangle of crescent rolls. Then I just clamped the waffle iron down and repeated the process to make 2 large rectangles of pizza waffles, and cut each of the large rectangles in half to create 4 pizza waffles total! It was delicious!

Creamy Gnocchi Soup with Spinach and Turkey

I think I have discovered my new favorite soup ever to make… I made soup for a friend today after she had surgery and gnocchi is her favorite, so once I saw this recipe I wanted to try it!  She’s not a kale fan, though, so we used some frozen chopped spinach she had instead, and I also bought ground turkey instead of hot sausage.  The soup was PERFECT and the roasted red peppers in it were a perfect combination!  Here’s the recipe… would love to make it again in the future with kale!



Street Taco Lunch! 

Had my favorite lunch of the year so far so I wanted to post it for inspiration for future lunches!

I put black beans, sautéed peppers and onions, corn, rice, chicken and roasted Brussel sprouts in a mason jar. Then I brought some street taco shells to work and just spooned out half the mason jar one day and put it in the street taco shells with some avocado on top as well! It was nice because it was a two day lunch so I finished the second half of the mason jar the next day. 🙂 Easy and delicious!

Warm Mixed Fruit Bowl

Decided to do a version of this recipe for lunch today, because how awesome does a warm fruit bowl sound! >> http://nutritionstripped.com/warm-fruit-bowl-cashewmilk/

This is what I used:
1/2 cup frozen mixed berries (rinsed)
1 small red apple, cut into chunks
3 dried black mission figs, cut into small pieces
1/2 cup vanilla almond milk
1/4 cup essential fiber cereal
1 tbsp sliced almonds
sprinkle of chia seeds

This is what I did:
1. Turn oven to 350 degrees.
2. Put parchment paper in baking pan and place berries, apple chunks and figs on parchment paper.
3. Sprinkle fruit with cinnamon.
4. Bake for 10-15 minutes until fruit is soft and giving off some juice.
5. Mix warm fruit in a bowl of almond milk and sprinkle with toppings! I topped with the cereal, almonds and chia seeds.

Mini Taco Bowls

Have lots of leftover taco ingredients in the fridge so I decided to make mini taco bowls for lunch, and I looked off of this recipe:

Saw some recipes that used the back of cupcake tins too that I’ll also have to try sometime but it was a really satisfying lunch!! I loved it so much that I also decided to experiment with making a s’mores dessert mini taco… 😍👌🏼
